Chilled Gazpacho Soup

 
Chilled Gazpacho Soup

Yield: 1 -2 servings

Ingredients:  

  • 5 medium tomatoes, finely chopped

  • 1 red pepper, finely chopped

  • 1 cucumber, finely chopped

  • 1/4 onion, finely chopped

  • 1 avocado, pitted, peeled, and chopped

  • 1 cup water

  • 3/4 teaspoon sea salt

  • 1/2 cup chopped cilantro

  • 1/2 cup chopped fresh basil

  • 1/2 cup lemon juice or lime juice


Instructions: 

  1. Combine all ingredients in large bowl and toss. 

  2. Pour half of the mixture into a food processor and pulse. 

  3. Return the mixture to the bowl with the rest of the soup and mix well.
