Fiesta Taco Salad

 
Taco Salad

Yield: 2-4 servings

Ingredients:  

  • 8 cups romaine lettuce

  • 1 cup corn, fresh or frozen

  • 1 avocado, chopped

  • 2 large tomatoes, diced

  • 1 orange bell pepper, diced

  • 2 cups carrots, shredded

  • 1/2 cup fresh salsa

    For the dressing:

  • 4 oz cold pressed extra virgin olive oil

  • 4 oz lime juice

  • 1/2 red bell pepper

  • 1/2 cup cilantro, fresh or dried

  • 1 clove garlic, minced

  • 1 Tbsp chili powder

  • 1 tsp sea salt

Instructions: 

  1. Dressing prep: blend all ingredients well in high-powered blender and use immediately or refrigerate for up to 7 days.

  2. Salad prep: Place greens, vegetables, and avocado in a large mixing bowl. Toss in dressing until well coated and serve.
