Fudgy Pumpkin Bites

 

Yield: 6-8 bites

Ingredients:

  • ¼ cup raw cashew butter, or another nut butter

  • 1 Tbsp. pumpkin purée, fresh or canned

  • 1 Tbsp. maple syrup

  • ½ Tbsp. melted coconut oil

  • 3 scoops plant protein powder

  • 3 Tbsp. coconut flour

  • 1 Tbsp. mini chocolate chips

  • ½ tsp. pumpkin pie spice

  • Pinch of cinnamon

Chocolate Layer:

  • 2 Tbsp. melted coconut oil

  • 1 ½ Tbsp. raw nut butter

  • ½ Tbsp. cacao powder

  • 1-2 tsp. maple syrup

Directions:

  1. Grab two bowls, mix the pumpkin mixture in one and the chocolate mixture in another.

  2. Scoop pumpkin mixture into the cavities of a silicon ice cube tray or lined muffin tin, filling each about halfway and press mixture down.

  3. Pour a thin layer of chocolate on top of each until all are covered, then go back and add more chocolate to each until you run out.

  4. Place tray in the fridge to harden for 20-30 minutes and enjoy.

  5. Store leftovers in the fridge.
