Red Pepper Curry Soup

Yield: 1 serving

Ingredients:  

  • 1 ½ large red or yellow bell peppers

  • 1 apple, peeled and chopped

  • 1 small avocado

  • ½ cup basil leaves

  • 1 green onion, chopped

  • 1 clove garlic, minced

  • 1 Tbsp. curry powder, or to taste

  • Sea salt, to taste

  • Dash cayenne

  • 2 cups water, or until desired consistency is reached

Directions:

  1. Blend all ingredients in a high-speed blender until smooth.

  2. Chill in refrigerator for 2-3 hours.

  3. Serve chilled in a bowl or mug.
