Matcha Bliss Bites

 

Yield: 30 bites

Ingredients:

  • ½ cup unsweetened shredded coconut, plus 2 Tbsp set aside for rolling

  • ½ cup raw cashew butter (or almond butter)

  • ½ cup coconut flour

  • ¼ cup collagen powder

  • ¼ cup agave (or maple syrup or honey)

  • 1-2 Tbsp. matcha powder

  • 1 Tbsp. greens powder

  • 1 Tbsp. chia seeds (or hemp seeds)

  • ¼ tsp. sea salt

Instructions:

  1. Add all ingredients to a mixer or food processor and mix until a thick doughy texture forms. Scrape down sides as needed.

  2. Scoop out 1 Tbsp. amounts and gently roll into balls.

  3. Roll each ball in the 2 Tbsp. shredded coconut until evenly coated.

  4. Freeze or refrigerate for 10-15 minutes, or until firm.

  5. Store in the freezer, or refrigerator for up to 1 week.
